Boiled Icing No. 1
- 1 cup sugar
- 1/3 cup water
- 1 teaspoon corn syrup
- 1 egg white
- 1/2 teaspoon flavoring desired
Mix sugar, water and corn syrup. Cover the pan for the first few minutes of boiling to prevent the formation of large crystals on the side of the pan. Boil to 238 degrees. Pour over the stiffly beaten white of egg, adding it gradually and beating until stiff enough to spread. This makes a dense, sweet icing.
Boiled Icing No. 2
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon corn syrup
- 2 egg whites
- 1/2 teaspoon flavoring desired
Mix sugar, water and corn syrup, and boil to 244 degrees following the directions of Icing No. 1. This makes a fluffy icing.
Marshmallow Icing
- 1 1/3 cups sugar
- 1/2 cup water
- 1 tablespoon corn syrup
- 1 tablespoon marshmallow creme, or 6 marshmallows, cut fine
- 1/2 teaspoon vanilla
- 1 egg white
Mix sugar, water and corn syrup. Cover the pan for the first few minutes of cooking. Boil to 245 degrees. Add the marshniallows to the stiffly beaten egg white, and pour the syrup over them very slowly, beating constantly until firm enough to spread.
Marshmallows
- 2 cups sugar
- 1 1/4 cups water
- 1/16 teaspoon salt
- 2 level tablespoons gelatin
- 1 teaspoon vanilla
After the gelatine has soaked for 5 minutes in half of the water, place the remaining water with the sugar, over the fire and boil to 238 degrees. Add the gelatin and stir until dissolved. Let it stand until partially cooled. Add the flavoring and salt. Beat until the mixture becomes white. At this point the beaten white of one egg may be added if a more moist, fluffy marshmallow is desired.
Continue beating until the mixture begins to thicken. Then pour into bread pans which have been thoroughly dusted with powdered sugar. One inch thickness is desireable. When chilled, loosen the edges with a knife and turn out on a board. Cut in cubes and roll in powdered sugar. For variety, chopped dates may be stirred into the mixture just before it is beaten.
Stuffed Dates
Cut each date along its thin side and carefully remove the seed. Fill the space with a small portion of the marshmallow. and fold the date so as to give the appearance of being whole. Roll in granulated sugar.
