Chinese Recipes
Rice (For 4 People)
Three cups of rice. Wash 3 or 4 times with cold water. Use a large, flat-bottomed saucepan for cooking. Put the rice in cold water, which comes about 1 inch above the rice. Cover pan tightly and keep covered during the cooking. Bring to boiling point quickly and boil rapidly until all the water is absorbed. Then lower the gas flame very low, for from 15 to 20 minutes. No salt or dressing used in serving.
Soup (Meat and Spinach) For 4 People
Use some raw bones. Make a broth from the bones. If pork chop is used, the bones can be removed from the chops and used. Use salted water for the broth.
- 1 lb. pork chop, or 3/4 lb. of round beef steak (put the meat through the finest grinder)
- 1/8. teaspoonful salt
- 1/2 teaspoonful cornstarch
- a little water to mix
- stir into the chopped meat
- 1 lb. spinach, well washed
Wring all the leaves into two pieces. When the broth is ready, put the spinach in and cook about 10 minutes. Then form the meat into balls about the size of the thumb tip, and drop into the broth. Season to taste. If liked, add 1 tablespoonful of lard to the soup. Serve.
Chinese Omelette (For 4 People)
- 1 lb. shrimps or lobster
- 1/4 lb. mushrooms (fresh)
- 1/4 lb. pork chop (1 chop)
- 3 eggs
- 1 small Spanish onion
Cut the pork chop in very fine pieces. Remove the shrimps from shells, wash. Remove top skins from the mushrooms, parboil in boiling water 15 minutes. Chop the onion, shrimps and mushrooms very fine. Heat frying pan. Put in 1/2 teaspoonful of lard. Fry the onion about 10 minutes--a little sugar improves it. Be careful not to burn. Put in the chopped shrimps, meat and mushrooms. Stir constantly 5 minutes. Add a tablespoonful of water, 1/2 teaspoonful of salt and cook another 10 minutes. Break the 3 eggs and beat well with a spoonful of cold water. Then put all ingredients together and heat a clean frying pan, put in a teaspoonful of lard. Drop in 3 tablespoonfuls of the mixture at a time, and brown well on both sides.
