Hungarian Goulash
Fry one pound of ground beef and one onion until brown. Cover with water and simmer for half hour. Add potatoes, tomatoes, and parsnips. Season with red pepper. (Other vegetables may be added if desired.)
Strawberry Shortcake
- Yolks of 5 eggs
- 2 cups powdered sugar
Mix 1/2 hour, stirring always one way.
Add:
- 2 cups flour
- 2 tablespoons baking powder
- Pinch salt
- Beaten whites of 5 eggs
- Water to soften
Bake in two deep layers or four thin layers. If deep layers, cut each layer in half, so as to make four thin layers when baked. Make a filling of whipped cream, and cover top with same. Put strawberries between the layers and on top.
Frosting
- 1 box confectioner's sugar
- 1/4 lb. grated chocolate, melted
Mix and add a little water. Spread and put in nuts and candied cherries.
Paprikash Chirka
- Chicken
- 2 large onions
Fry till slightly brown in 1 large tablespoon lard. Cut a chicken in small pieces, add to onions with dash of red pepper, 1 green pepper chopped fine, and 1 tomato, chopped. Cover and cook over slow fire, stirring occasionally. Add a little water if necessary. When the chicken is cooked, add 1 pint of sweet cream, mixed with teaspoon flour. Let it come to a boil. Break good egg noodles into very small pieces, adding to the pot. When the noodles are cooked, serve.
Ratesh (Cheese Strudl)
- 1/2 lb. flour
- 1 egg
- Lard size walnut
- Salt
- Lukewarm water to make thin dough
Let stand for 1/2 hour. Flour a large table, and spread the dough out as thin as paper over the table. Let it stand until it dries well. Mix 1 lb. pot cheese with 1/2 pt. sweet cream, 3 eggs, little sugar, cup of raisins and cinnamon. Butter the outspread sheet of dough with melted butter 1/4 lb.) Lay the filling in strips on the dough. Fold in the edges of the sheet, and roll. Cut into three lengths, and lay in well-buttered baking-pan. Bake until brown.
Torta
- 1 lb. shelled nuts
- 5 pieces toast bread crushed fine
- Yolks of 8 eggs
- 2 tablespoonfuls baking powder
- 1/4 lb. grated sweet chocolate
Mix and add whites of eggs well-beaten 2 cups powdered sugar Add water to soften. Put in 2 cake tins and bake. Use whipped cream as a filling, and put a chocolate frosting on the top.
