Piroshki with Cabbage

Make a noodle paste of

  • 2 eggs
  • 1 1/2 lbs. flour
  • Salt
  • Little water

Place a head of cabbage in boiling water, and let stand until the leaves are soft. Fry the cabbage in pork and salt and pepper to taste. Roll out the paste and spread a layer of the fried cabbage on it. Then cover with another layer of paste. Cut into dumplings and boil in water for 1/2 hour.

Piroshki with Rice

Stuff the noodle paste with steamed rice, fried in pork.

Piroshki with Cheese

Stuff the noodle paste with 2 eggs mixed with mashed potatoes, pot cheese, and a little sugar.

Borsch (Beet Soup)

Boil beets. Drain and cut into small pieces. Add chopped onions, meat, and water. When cooked, add a teaspoon of vinegar or pinch of salts of lemon. Warm 1/2 pint of cream, and beat into the soup when ready to serve.

Burakowa Zupa (Beet Soup)

  • 1 lb. fresh ham
  • 1 onion (chopped)
  • 1/4 tablespoon salt
  • 1 cup light cream
  • 2 beets
  • 1 tablespoon flour

Cover 1 lb. of fresh ham with cold water, twice as much water as meat. Add chopped onion and salt. Cook from 4 to 6 hours. Thoroughly cook 2 beets, slice and add to soup. Thicken with flour heated in 1 cup of cream.

Placiki

  • 4 grated potatoes
  • 1 grated onion (small)
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons flour

Grate potatoes and onion. Beat eggs separately and mix all ingredients. Brown by spoonfuls (thin cakes) in butter.

Jelly Pancake

Make a batter of eggs, sugar, flour and milk. Pour into well-buttered frying pan a thin layer of the batter Fry as pancake. Cover with jelly and roll. Cut and serve.

Ponczki

  • 2 cups flour
  • 2 eggs
  • 1/2 cup scalded milk
  • 2 tablespoons butter
  • 1/8 teaspoon salt
  • 1 yeast cake
  • 2 tablespoons sugar

Dissolve yeast in scalded milk (when lukewarm) Add flour and mix until smooth. Add eggs, sugar, butter and salt. Mix to a stiff dough and knead thoroughly, roll out to 1/4 inch thickness. Cut with doughnut cutter. Let stand until double in volume. Fry in deep fat.

Sweet Batter

  • 1 cup flour
  • 1/4 teaspoon salt
  • 2 level tablespoons sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 egg
  • 1 teaspoon melted fat

Sift salt, flour and baking powder together. Add milk and melted shortening to well-beaten egg. Mix those with dry ingredients and drop batter by spoonfuls on slightly greased hot griddle.
