Fruit Compote (Compota)
Cut in small pieces 1 orange, 1 large apple, 1 banana, 1 peach. Add 4 or 5 tablespoons of sugar, 1/2 glass of fruit syrup. Serve with wafers on top.
Fried Mackerel (Cavala fritz)
Fry the mackerel in small pieces, dipping it in flour or corn meal. Fry 4 large onions, 1 tablespoon olive oil, 2 tablespoons of parsley cut fine, garlic, pepper and salt. Add 1/2 cup vinegar and boil. Pour this sauce over the mackerel, and serve.
Rice and Tomato (Aroz de tomato)
- 2 1/2 cups of rice
- 1 can of Campbell's tomato soup, or 3 tomatoes
- 1 tablespoon butter
- 1 small onion
- Pepper and salt to taste
- Parsley in small pieces
Boil till the rice is cooked.
Stewed Kidney Beans (Gizado de fajao)
Soak 1 1/2 lbs. of beans over night Cook with a little less than 1/4 lb. salt pork till soft. Add 1 onion and 1 tomato or 1/2 can tomato soup Pepper and salt After this is cooked, add 1 tablespoon olive oil, 1 tablespoon vinegar, parsley in small pieces.
