Lemon Cake

Ingredients

  • 1 cupful batter
  • 2 1/2 cupfuls sugar
  • 5 eggs beaten separately
  • 2/3 cupful of milk in which dissolve 1/2 teaspoonful of soda
  • 1 lemon, juice and grated rind 4 cupfuls flour

Directions

No cream-tartar is used, the lemon juice furnishing the required acid.

Mix the butter and sugar. Add the beaten yolks, then the milk, followed by the flour and lemon, lastly the stiffly beaten whites of the eggs. Frost as follows:

Frosting

  • White of 1 egg (This white may be omitted from the above rule.)
  • 9 teaspoonfuls white sugar
  • teaspoonful corn-starch
  • 1 teaspoonful lemon juice
