Fig Ice Cream

Ingredients

  • 4 ups milk
  • 2 tbsp. corn starch
  • 1 tbsp. gelatine
  • 2 cups cream
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 cups finely chopped figs
  • 1 tbsp. vanilla

Directions

Boil milk in the double boiler, reserving 1/2 cup. Mix corn starch with the remaining milk. Add this mixture to the boiling milk. Cook 10 minutes. Beat the eggs and sugar together. Pour the cooked mixture on this, stirring all the time. Return to the heat, add the gelatine, which has been soaking in 4 tbsp. of cold water, and cook 3 minutes. Set away to cool. When cold, add the cream and vanilla, and freeze. When the cream has been freezing 10 minutes, take off the cover and stir in the figs. Cover again and freeze until hard.
