Cabinet Pudding

  • 1 pint flour, sifted with 1 teaspoonful baking-powder
  • 4 eggs (reserve 2 yolks for sauce
  • 1 cupful sugar
  • 1/2 lemon, juice and grated yellow rind
  • 1 cupful raisins, seeded and cut in two
  • 1 cupful Zante currants, washed and dried

Directions

Cream the butter and sugar, add the eggs, well-beaten, then the milk, flour, etc. Put in a buttered pudding-mold and boil steadily two hours.
