Hominy Griddle Cakes
1 pint hominy, boiled very soft. Add 1 pint sifted cornmeal 1 teaspoonful salt. 1 teaspoonful butter. 3 eggs. Make into a thin batter with 1 quart sweet milk. Beat together some time. Bake on a griddle. These can be baked in waffle irons. When well made and baked very thin these cakes are delicious, especially when served with maple syrup.
