How to Make Crackling Corn Cake
Ingredients
- 3/4 cup cornmeal
- 1 teaspoon soda
- 1 cup bread flour
- 1 teaspoon baking powder
- 1/4 cup boiling water
- 1/4 cup pork cracklings
- 1/2 cup brown sugar
- 2 cups buttermilk
- 1 teaspoon salt
Directions
- Put the cornmeal in a bowl and pour the boiling water over it. Let stand five minutes.
- Sift dry ingredients.
- Add the rest of the ingredients to the cornmeal. Stir.
- Pour batter into a shallow greased pan.
- Bake.
