How to Make Hominy Gems
Ingredients
- 2 cups cold hominy
- 3 eggs
- 2 cups milk
- 1 cup cornmeal
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 tablespoon melted butter
Directions
- Scald the milk.
- Pour the milk over the cornmeal and mix thoroughly.
- Allow the mixture to cool, then add the rest of the ingredients.
- Pour batter into greased gem pans.
- Bake.
