Recipe for Parker House Rolls
Ingredients
- 7 cups flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 3 tablespoons butter
- 2 cups milk
- 1 yeast cake
Directions
- Mix four cups of the flour with the salt, sugar, and butter.
- Scald the milk, then add it to the other ingredients. Stir thoroughly.
- Add the yeast and let the sponge rise until frothy.
- Put in the rest of the flour and mix thoroughly.
- Knead the dough, then let it rise again.
- Make each roll by using the following steps:
- Cut off a small bit of dough and roll it flat.
- Brush the top with melted buttter.
- Cut across the middle of the dough with a knife, making sure not to cut all the way through the dough.
- Fold the dough in half and press the edges together.
- Allow the dough to rise again.
- Brush the tops of each roll with butter.
- Place rolls on a greased pan and bake.
