Recipe for Parker House Rolls

  1. Mix four cups of the flour with the salt, sugar, and butter.
  2. Scald the milk, then add it to the other ingredients. Stir thoroughly.
  3. Add the yeast and let the sponge rise until frothy.
  4. Put in the rest of the flour and mix thoroughly.
  5. Knead the dough, then let it rise again.
  6. Make each roll by using the following steps:
    • Cut off a small bit of dough and roll it flat.
    • Brush the top with melted buttter.
    • Cut across the middle of the dough with a knife, making sure not to cut all the way through the dough.
    • Fold the dough in half and press the edges together.
    • Allow the dough to rise again.
    • Brush the tops of each roll with butter.
  7. Place rolls on a greased pan and bake.
