Recipe for Clam Chowder

Saute 4 slices salt-pork dice in a hot spider until crisp, take out and cook in the fat 1 sliced onion until quite yellow, drain from the fat, and with the pork press through colander into kettle. Add 2 potatoes diced, 1 cup tomatoes, 1 tbsp. tomato catsup, and 3 pts. water. Cook until potatoes are tender and add 2 doz. chopped clams which have been well scrubbed and cooked in a very little water until shells open, add the strained liquor, 1/2 teasp. Tabasco, 1/2 teasp. salt, 3 large milk crackers rolled rather fine, and 1 slice toast cut in dice. When boiling add 1/2 lemon sliced in thin quarters and serve at once. If a creamy chowder is preferred add 1 cup rich milk.
