Recipe for Cream of Celery Soup

Ingredients

  • 3 stalks of celery
  • 1 slice of onion
  • 3 cups of milk
  • 2 tablespoons of butter
  • 2 table spoons of flour
  • 1/4 teaspon of pepper
  • 1 teaspoon of salt
  • 1 cup cream

Directions

Cut the celery into into one inch pieces and puree. Cook in double boiler with onion and milk for twenty minutes. Remove onion. Heat butter, add flour, pepper, salt; first two-thirds of a cup, and gradually the rest of the celery broth, add cream; cook until smooth and serve at once.
