Cream of Potato Soup

Ingredients

  • 2 slices of onion
  • 1 sprig parsley
  • 2 medium-sized potatoes
  • 1 cup milk
  • 1 cup potato water
  • 1 Tb. flour
  • 2 Tb. butter
  • 1 tsp. salt
  • 1/8 tsp. pepper

Directions

Cook the onion and parsley with the potatoes until the potatoes are soft. Drain and mash. Make a sauce of the milk, potato water, flour, and butter. Season with the salt and pepper, add the mashed potato, and serve.
