Recipe for String Bean Salad
Ingredients
- 1 quart of string beans
- 1 tablespoon flour
- 2 tablespoons butter
- 2 tablespoons lemon juice
Directions
String and remove the ends from the beans. Cut the beans in half. Cover with boiling water and cook until tender. Drain the beans and save one cup of the remaining liquor. Cream the butter and flour. Pour the liquor over the flour and butter, stirring constantly. Cook this mixture for five minutes, remove from heat and stir in the lemon juice. Pour the sauce over the beans and serve.
